Crab Linguine

Fancy whipping up a delicious and impressive dinner party style meal in 15 minutes? Visit your local fishmonger or good quality supermarket today and pick up 200g of brown crabmeat. Chilled or frozen, it doesn’t matter, just make sure it’s Irish.

It is the easiest meal I have ever made and its very difficult to get wrong. The crab is the star of the show while all ingredients just need a little heating or mixing. If you want to put your significant other in a good mood, impress your inlaws or butter up your boss, this is the recipe to go for. You WILL have the time to be a charming host too.

Serve with a simple green salad and chilled white wine. (I love sauvignon blanc).

200g chilled or frozen brown crabmeat.

2 spring onions finely chopped

1 clove of garlic chopped or crushed

Half a red chilli chopped (include seeds if you like heat)

1 very small glass of white wine (keep the rest for yourself)

Simplee Salt Free Seasoning, Simplee salt and pepper

a bunch of fresh herbs (either parsley, basil or oregano)

Optional: grated parmesan to garnish

75ml cream

packet of linguine or spaghetti (sauce sticks better to linguine, but spaghetti works well too and is cheaper)

Cook pasta as per packet instructions. As soon as you have put them into boiling water, heat some oil in a non-stick pan.

Add garlic, onions and chilli. Sweat on a medium heat for 4-5 minutes.

Add crabmeat and Simplee salt free seasoning. Stir for about 1 minute or until crabmeat is heated.

Pour in wine and cook until 50% evaporated.

When pasta is done, drain and add to the pan. Swirl in with the crab mixture with the herbs and cream.

Season with salt and pepper. Add parmesan if using.

(yes, it really was that easy)
