Strawberry Cupcakes

Strawberry Cupcakes.

This is my Mums own recipe and the fresh strawberries inside the cake mix give a lovely surprise. These are pretty easy cupcakes to make, but to be honest, my Mum is the baker in my family, so I have gotten a little lazy and usually eat hers rather than make them myself. They are delicious with a cup of tea in the garden and also ideal to bring to a bar-b-q or party.

Ingredients:

12oz self-raising flour

8oz flora buttery

8oz caster sugar

4 drops of vanilla extract

4 free range eggs

100 g white chocolate chips

1 punnet of fresh strawberries diced for the mix. More for decoration.

Whipped cream for the topping.

(Makes 24)

 

Method:

Pre-heat oven to 180 degrees fan.

Put flora, sugar, flour, eggs and vanilla extract into a bowl. Mix at high for about 5 minutes.

Fold in chocolate chips and diced strawberries.

Divide the mixture into 24 baking cases and bake for 25-30 minutes.

Cool on a tray and decorate with fresh whipped cream and sliced strawberries.
