Strawberries in Balsamic Vinegar

This is the easiest dessert in the world to make and looks fantastic served in a champagne glass with a quenelle of ice-cream. If you have people coming over to eat, you can prepare it beforehand and simply put together when it is needed.

Serves: 4


Half a punnet of strawberries per person, sliced lengthwise and stems taken off.

2-3 tablespoons of balsamic vinegar

1 tablespoon of sugar

10-12 twists of Simplee Lemon Pepper

Good quality vanilla ice-cream

Sprigs of mint to garnish (optional)

zest of 1 lemon (optional)



Mix strawberries, sugar, balsamic vinegar and Simplee Lemon Pepper in a big bowl and chill for 1 hour.

When ready to serve, pile the strawberries into a champagne glass and top with a quenelle* of ice-cream.

Garnish with mint and lemon zest.

*how to make a quenelle: have a cup of hot water next to you. Dip a teaspoon into the water to heat the metal. Run the hot spoon over the ice-cream and form an egg shape. The trick is to use ice-cream that has been slightly thawed. Have a look at this youtube video also
